Baby Food

I've been slowly trying new food with Greer that I make at home.
This is a combination of several things but she seems to like it and it get's some greens in her, which is always a challenge.
I've learned from the Sprout Baby Food she likes so much, that roasting as opposed to steaming has lots more flavor.

Ingredients:
2 carrots, washed and chopped to 2" chunks
2 large sweet potatoes, sliced a quarter inch thick leaving the skins on
2 apples, halved, cores and stems removed
1 large handful of spinach
Olive oil
2 T. unsalted butter
1 t. cinnamon

Preheat the oven to 400ยบ
Arrange everything on a baking sheet. Drizzle with olive oil until all veggies are coated.
Bake for 40 minutes, turning the veggies once.
Meanwhile melt the butter in a skillet and wilt the spinach down.
Remove the skins from the sweet potatoes. Scoop out the inside of the apples.
Combine everything in a food processor with the cinnamon. Add in some apple juice or water to get to the consistency your baby will eat.

I put all the food into ice cube trays to freeze. Then pop them out into tupperware for storage. I'm told fresh baby food keeps for a month in the freezer.

And just to remind you of the sweetness who is eating this. Here she is. All 9 months of her. Time is flying SO fast!

It's Father's Day!

We've had such a nice day today!

Went to church...

Stopped by Whole Foods...

Sat by the pool...

And cooked a delicious dinner that I wanted to share!
I made Roasted Parsnips & Carrots from my new Barefoot Contessa cookbook, and some sauteed Pork Chops with caramelized onions and bacon. Adam said it was a great first Father's Day!

Here he is in his first few days of fatherhood.
And here he is today. He is SUCH a good dad. I love watching him with our girl.
And happy Father's Day to my wonderful dad. Here we are doing one of my favorite things!

Trout with Pak Choi

I have wanted to share this recipe for awhile. It was easy and delicious and we've already made it twice!
I've mentioned we are getting a weekly box of fresh produce from our local CSA. When I received Pak Choi, I was excited but nervous to use something new.

What you'll need:
  • 4 trout fillets (I found them easily at Whole Foods. Substitute Catfish if you need too)
  • 1" of fresh root ginger, peeled and chopped
  • 2small garlic cloves, chopped
  • 1 small jalapeno, seeded and finely chopped
  • grated zest and juice of 2 limes
  • 1 or two Pak Choi, quartered lengthways
  • 2 or 3 tbsp soy sauce
Heat your grill.
Mix the ginger, garlic, jalapeno, lime zest and lime juice in a small bowl with a spout.
Put each fish fillet on a large square of foil and distribute the mixture evenly on top.
Then lay the pieces of pak choi around and on top of the fish. Pour the soy sauce over the pak choi and seal the foil to make a package.Grill on low for 15 minutes.
The fish will come out flaky and perfect and the Pak Choi really compliments the flavor.

What's been goin' on?

Hi folks! Lot's of happenings around here that I want to share.

We went to Birmingham to see Aunt Carlye graduate from Spain Park.
We also got to meet this little lady. They are already best friends, just like their mommas :) Greer got to be photographed by her grandpa Daddy Rod while we were there!
My next trip I got the rare treat of being with my two childhood best friends.
All three of us together! It never happens! Whitney and her husband just built a house on Lake Harding so we chose that as our meeting place ;) Megan flew in from D.C.
In between taking work calls, answering emails and taking care of two little girls, we did find time to lounge in the water.We made Monkey Bread.Tucker helped!Tucker and Greer were fast friends. They even shared some strawberries.
On our way in, we stopped by the Auburn Crew docks. My old stomping ground.Over the weekend Adam and I headed to the ballfield where we got to play a friendly kickball game before Taylor and Lindsey's wedding. Wes was the best man this day, and also the best man in our wedding 5 years ago.Fancy Pants enjoyed playing with me on the sidelines.And last but not least, she has some new bath toys. Daddy finds ways to keep himself amused during long bath times! Notice she's trying to unstop the drain. We cannot get her to stop. Most nights she ends up just sitting in an empty tub. That's all I got for now!
