Auburn

We spent our first weekend in Auburn since Greer was born. Here is a recap in pictures!


Friday night started off with some Niffers! I haven't had a fishbowl in forever. And apparently I am not so smooth at squeezing the lime into it...

Saturday we headed to Whitney and Tommy's tailgate.
Whitney held Greer......Tommy got the fire going with his homemade torch!Jon and Aften came all the way from Charlotte. We were SO glad to see them!!!
Her first walk towards the stadium. Lots of people were so excited to meet her.

Roasted Vegetables

I've been loving roasting vegetables lately. It is super easy and such a great way to eat a variety in one meal.Ingredients:
2 carrots, chopped into strips
2 parsnips, chopped into strips
4 new potatoes, cubed
10 brussels sprouts, cut in half
1 t. oregano
1 t. thyme
1 t. basil
1 t. rosemary
olive oil for drizzling
salt and pepper

Chop all your veggies and place on a baking sheet in a single layer.
Drizzle olive oil over everything. Top with all your spices. Mix thoroughly!
Roast for 40 minutes at 400ยบ stirring everything once halfway through.I made about this for 2 of us, but there were some left over. Just adjust the amount of veggies to how many people you are feeding. I would say about 1 carrot, 1 parsnip, 2 potatoes and about 5 brussels sprouts per person!

My trusty assistant helped me by happily sitting in her bumboo chair and watching me cook!The pups are doing well too.Cooper is such a grumpy old man sometimes! Did I mention my dogs hate the laundry basket...
