Meatloaf

This is Adam's parent's meatloaf recipe. It has breadcrumbs in it so it is not paleo. I always say that we are not "die hard" and the small amount of bread in this is fine to me. It's a great source of protein and even has carrot in it!
We ate one and froze one since it makes two loafs. I LOVE this meatloaf, it is SO good!

2 lb ground beef
3/4 c. milk
1.5 cups bread crumbs
1/8 t. pepper
2 t. salt
1 medium onion, diced
1 medium carrot, grated
2 eggs beatenFor the topping:
1/4 c. ketchup
2 T. spicy brown mustard
3 T. honeyDirections:
Preheat oven to 325º
Pour milk over bread crumbs.
Add beef, salt, pepper, carrots, onions, and eggs and mix thoroughly.Pack into loaf pansMix ketchup, mustard and honey. Spread over meatloafBake for 1.5 hoursEnjoy!
